The history of salt water taffy from yesteryears shows that salt water taffy apocryphal story was discovered in 1883 by Mr. david Bardley when hies shop was flooded by major storm in 1883. the entire stock of the shop was soaked in the salty water of Atlantic Ocean. A young girl came to buy taffy, he is said to have offered some "salt water taffy." That girl was delighted by this saltish taffy and proudly walk down the beach to share this with her friends. Mr. Bradley’s mother loved this name “Salt Water taffy” and thus it was then named by these words. Whatever the story behind for this story, the real credit goes to Joseph Fralinger who popularized this name by boxing this and selling it to an Atlantic city souvenir. Still modern markets still provides big retailers to the consumers of the Salt Water Taffy. It was originally marketed in 19th century in New Jersey.
A former glassblower and fish merchant named as Joseph Fralinger, opened a retail store on the Boardwalk for salt water taffy. During this year Fralinger had added a taffy concession and spent his whole winter in perfecting the Salt Water Taffy taste and tang. He first use molasses, then chocolate and vanilla, eventually he reaches to 25 flavors of salt water taffy.
Within few years Fralinger's grew to six locations for his Fralinger salt water taffy, then he decided that Salt Water Taffy should be taken back to home just for resort visitors.he uses his experience of fish merchant, he boxed one pound oyster boxes with taffies, this was his first "Atlantic City Souvenir." His one pound box of salt water taffy still holds the most popular souvenir all about for 125 years later. By 1899 Salt Water Taffy this word become common for households of America.
During these years confectioner Enoch James and his sons claim for the discoverer of Salt Water Taffy before the introduction of this taffy to the Atlantic City Boardwalk in the 1880's. After serving many years for large candy companies throughout the America, Mr. James brought his family back to Atlantic City to serve for their "original" Salt Water Taffy.
James developed a high quality salt water taffy that would not pull out one's teeth.
His development includes:
1. eliminated the stickiness that made the taffy,
2. make the wrapper inseparable,
3. a smooth, rich, wholesome taffy available in a variety of flavors and a new "Cut-to-fit-the-mouth" shape,
4. extended to chocolate dipped Salt Water Taffy,
5. filled centers, chocolate taffy pops,
6. macaroons and
7. boardwalk fudge.
In 1907, the James salt water taffy company updated the manufacturing process which include
1. taffy wrapping machines,
2. The first candy pulling machines,
3. Electric tempering ovens, and
4. Vacuum cooking kettles.
Well! Question arises who was the real originator of Salt Water Taffy, Enoch James', Joseph Fralinger's or David Bardley? Aside from this question the importance goes to the recipes and basis which are preserved through the sands of time and still in modern use.
Today’s difference in taste and quality shows that what ever the accident taken in its discovery, it is least important, important is today’s compititon and mantaining high quality value.

2. 1 cup light corn syrup
3. 2 teaspoons glycerin
4. 3/4 cup water
5. 2 tablespoons butter
6. 1 teaspoon salt
7. 1/4 to 1 teaspoon flavoring
8. 3 drops food coloring
9. 2 cups sugar
